Recipe
500g mixed dried fruit
670ml soya milk
150ml rapeseed oil
125g chopped walnuts
1 heaped tbsp apricot jam
handful glace cherries
450g gluten-free self raising flour
2 tbsp chia seeds
2tbsp flax seeds
1 tbsp mixed spice
Tip
I used ‘Mixed Fruit with Cranberries & Apricots’ from Tesco for the fruit and it worked really well.
How to make it…
- Preheat oven to 150 degrees and grease and line a 9” cake tin
- Mix all the ingredients together in the order shown
- Pour cake mix into tin and cover with grease-proof paper
- Bake for 2 hours at 150 degrees
- Turn oven down to 130 degrees and back for another 45 minutes-1 hour
- Remove from tin and place on a cooling wire
- Allow to cool completely
- Enjoy!
