Vegan & gluten-free healthy fruit cake recipe (easy)

Recipe

500g mixed dried fruit

670ml soya milk

150ml rapeseed oil

125g chopped walnuts

1 heaped tbsp apricot jam

handful glace cherries

450g gluten-free self raising flour

2 tbsp chia seeds

2tbsp flax seeds

1 tbsp mixed spice

 

Tip

I used ‘Mixed Fruit with Cranberries & Apricots’ from Tesco for the fruit and it worked really well.

How to make it…

  • Preheat oven to 150 degrees and grease and line a 9” cake tin
  • Mix all the ingredients together in the order shown
  • Pour cake mix into tin and cover with grease-proof paper
  • Bake for 2 hours at 150 degrees
  • Turn oven down to 130 degrees and back for another 45 minutes-1 hour

  • Remove from tin and place on a cooling wire
  • Allow to cool completely
  • Enjoy!
